Sodium tripolyphosphate (STPP), the sodium salt of the pentaanion of polyphosphate, also known as pentasodium tripolyphosphate or sodium triphosphate (as opposed to trisodium phosphate), is a synthetic ingredient mainly used for water retention in fish. Its European food additive number is E451(i).

White granule or powder, apparent density 0.35-0.90g/cm3, melting point 622℃. Soluble in water, the aqueous solution is alkaline. Hydrolyzed into orthophosphate in water, complexed with calcium, magnesium, iron and other metal ions to form soluble complexes. As an inorganic surfactant, it has some properties of organic surfactants.

Sodium tripolyphosphate STPP can be used to preserve foods such as red meat, poultry and seafood, helping them retain their tenderness and moisture.
