Sodium hexametaphosphate is used as a quality improver, pH regulator, metal ion chelating agent, binder and swelling agent in the food industry. It can stabilize natural pigments and maintain color in beans, canned food, and bean paste fillings; fat can be emulsified in the tank to maintain uniform texture; it can be used in canned meat and meat products to improve water retention and prevent fat from spoiling. Added to beer to clarify and prevent cloudiness. It is an excellent water softener without precipitation. It plays the role of water retention, swelling and bleaching in the processing of aquatic products. The general addition amount of sodium hexametaphosphate in food processing is 3-5‰, and the maximum addition amount of sodium hexametaphosphate in aquatic product processing is 3%.
