Lipase is a serine hydrolase that catalyzes the hydrolysis of fatty glycerol to form glycerol and fatty acids. An important feature of the hydrolysis reaction is that it proceeds at the oil-water interface. Lipase can also catalyze ester synthesis and transesterification reactions.

Liquid lipase-catalyzed esterification of fatty acids with methanol is a promising process for biodiesel production.

Activity definition: 1g of solid enzyme (or 1mL of liquid enzyme), under specific temperature and pH conditions, the hydrolyzate can be hydrolyzed for 1 minute to produce 1 μmol of titratable fatty acid. This is defined as 1 unit of enzyme activity and is shown as u/g (u/mL).

Working temperature: 30°C-70°C (effective), 55°C-65°C (optimum).

Working pH: 2.5-11.0 (effective), 3.3-4.0 (optimum).

calcium²⁺and magnesium²⁺Has an increasing effect on enzyme activity; Zinc²⁺, iron²⁺and mercury²⁺Inhibits enzyme activity. copper²⁺EDTA has little effect on enzyme activity.
